2 1/2 cups All Purpose Flour
3 tsp active yeast
2 tsp sugar
1 tsp turmeric powder
1/2 tsp salt
Deep fry in a skillet at high heat for about 30 seconds and flip over. Dough should form bubbles and puff. Remove from oil and place on paper towel to drain excess oil. In a bowl mix all dry ingredients thoroughly and add water while slowly until a soft dough forms. Leave to raise for approx 30 minutes and then form dough into 6 inch rounds.
2 Large Cucumbers coarse grated
1/2 cup chopped Cilantro
1 tbsp Lime juice
Salt to taste
The final ingredient is Chutney. We make ours from dried tamarind cooked down with sugar but for convenience store bought mango chutney will do just fine and save you the work.
How to Serve
In Trinidad doubles are made like little burgers with the Chana, relish and chutney wedged between two Barra and then wrapped in grease paper. At New Leaf we do doubles as a wrap with two overlapping barra wrapped around the Chana relish and chutney. Enjoy!
